食用油中のトリグリセリドの組成分析

Ascentis® Express C18 HPLC カラムを使用した分析
油脂中のトリグリセリドの組成分析には、GC（ガスクロマトグラフ）か HPLC（高速液体クロマトグラフ）のいずれかが使用できます。高温使用が可能
な無極性のカラムを使用する GC 分析では、トリグリセリドの炭素数を迅速に測定できます。しかし、炭素数が同じトリグリセリドの分離能では、
HPLC 分析の方が優れています。分析目的が各トリグリセリド中の脂肪酸組成の適切なデータの取得である場合には、LC-MS（液体クロマトグラフィー
質量分析計）の使用をお勧めします。Ascentis Express C18カラムはトリグリセリドの分析に最適なカラムです。
実験
サチャインチ（南米原産の植物、別名インカピーナッツ）の種子には油脂が 35
∼60% 含まれており、この油脂にはオメガ脂肪酸が豊富です。前処理をせずに
Ascentis Express C18 カラムを使用してLC-MS分析した油脂サンプルのクロマト
グラムの結果を、Fig.19 に示します。キャリブレーション用の標準品と保持時
間に基づいて、計 21種のトリグリセリドが同定されました。
結果および考察
サチャインチオイルのサンプルで同定されたトリグリセリドには、リノール酸
（C18:2、オメガ 6 脂肪酸）とリノレン酸（C18:3、オメガ 3 脂肪酸）が極めて多量
に含まれていました。さらに、トリグリセリド中の脂肪酸の結合位置が求めら
れました。このデータ（脂肪酸の種類と結合位置）は栄養学上重要です。
・ オメガ脂肪酸の割合が多いと、心臓血管疾患のリスク軽減に効果がある。
・ トリグリセリドの末端に結合した脂肪酸は、中央部に結合した脂肪酸より容
易に放出される。
ここで示すサチャインチオイル中のトリグリセリド組成の同定手順は、食品分
析で有益なものです。
