LUNCH 1. Tonkotsu Tonkotsu ("pork bone") ramen has a cloudy thick white broth that is made by boiling pork bones, fat and collagen over high heat for many hours. The broth is suffused with a hearty pork flavor and a creamy consistency. Tonkotsu is a specialty of Kyushu, particularly Hakata-ku, Fukuoka (hence sometimes called "Hakata ramen"). 2. Nakasu Nakasu is considered the busiest district in Kyushu. Nakasu is located in the eastern part of Fukuoka City and there are about 3,500 restaurants in Nakasu and over 60,000 people visit every night. 3. Step 2 Gently stir the soup and taste it. Swirl the firm store-made noodles well in the soup before eating them. Step 3 Add in the perfectly complementary ground Szechuan pepper or sesame seeds according to taste and enjoy the new flavors.
